My bet is your thermostat is sticking shut or there's air trapped in the cooling system. Temp would spike to 250 at 2k rpm and above with any load (mainly above 60 mph). Get off the throttle and it quickly recovered to normal (1-2 min). First hard drive after replacement it never went over 213 and held 203 95% of the time.
